La crescente attenzione delle filiere alimentari determina la necessità di riconsiderare il concetto di sicurezza e qualità alimentare; questi non sono più dei concetti isolati ma fortemente correlati al mercato e alle esigenze dei consumatori. Pertanto, la produzione la sostenibilità e la qualità delle colture cerealicole e di altri seminativi (legumi) sono ora declinate in modi differenti a relazione alle specifiche richieste dei diversi ambiti di mercato. Le tecniche colturali e le successive operazioni di lavorazione post-raccolta sono sempre più soggette ad essere valorizzate attraverso specifiche e mirate strategie. Il principale obiettivo del gruppo di ricerca è quello di evidenziare le esigenze emergenti dei sistemi alimentari (food, feed, industria dell'amido) e di trasferire le conoscenze in opportunità per i soggetti del settore agro-alimentare attraverso un approccio scientifico innovativo.
In dettaglio le più recenti attività includono:
- Lo studio delle pratiche agronomiche (scelta varietale, fertilizzazione, difesa, ...) e dell'impostazione dei sistemi colturali sulla produttività, la sostenibilità e la qualità in relazione agli obiettivi tecnologici (prodotti non lievitati, lievitati, estrusi, etc.) nei cereali e nelle leguminose da granella;
- la produzione di nuovi ingredienti a base di cereali e legumi con elevato valore aggiunto e caratterizzati da un più elevato valore salutistico (contenuto in composti bioattivi) attraverso l'innovazione dei sistemi colturali e di prima trasformazione;
- la gestione di strumenti agronomici e di prima trasformazione per la riduzione del contenuto di contaminanti (micotossine, metalli pesanti, residui di agrofarmaci, acrilammide) nei cereali e nelle leguminose da granella e l’applicazione di un approccio integrato che considera l’intero sistema colturale. Lo scopo dell’attività di ricerca è incentrato nell’identificazione e nella verifica delle tecniche pre e post raccolta e nelle soluzioni gestionali che possono minimizzare il rischio di una elevata contaminazione nei vari comparti delle filiere.
- l'individuazione di innovativi percorsi agronomici più sostenibili per la coltivazione dei seminativi, in grado di mantenere o aumentare la produttività, la qualità tecnologica e la sanità delle colture, rispetto alla gestione convenzionale.
